Demonstrating the classic granite profile of the Northern Rhône, grapes are organically farmed on the northern bank of the Ouvèze in Ardèche. With harvest carried out by hand. The grapes are whole bunch pressed using a pneumatic press, allowed to naturally cold settling, before spontaneous fermentation using indigenous yeasts. Both fermentation and ageing is in concrete tank, with the wine kept on its lees for 6 to 8 months. No sulphur is used before bottling.

All the finesse of Clairette, with a touch of Marsanne, from the warm granite soils of St. Julien and St. Alban, in the Ardéche. This is a beautiful, multi-layered wine, and a reference to Adèle Blanc-Sec, the heroine of a newspaper comic strip, set in Paris at the turn of the 20th century.
